GARLIC MARINADE

1/4 Cup vegetable oil

4 cloves garlic, finely chopped

1 tablespoon chopped fresh or 1 teaspoon dried rosemary leaves, crushed

1/2 teaspoon ground mustard (dry)

2 teaspoons soy sauce

1/4 Cup red or white wine vinegar

1/4 Cup dry sherry or apple juice


Heat oil in 10 inch skillet over medium-high heat. Cook garlic in oil, stirring frequently, until golden.  Stir in rosemary, mustard and soy sauce; remove from heat. Stir in vinegar & sherry (apple juice); cool.

Place 1-2 lbs boneless or 3-4 lbs bone in beef or pork in shallow glass or plastic dish.  Pour marinade over meat. Cover and refrigerate up to 24 hours.

Remove meat from marinade; reserve marinade.  Cook meat as desired, brushing occasionally with marinade.

Remaining marinade MUST BE BOILED to serve as a sauce.  Heat marinade to boiling, stirring constantly; boil and stir at least 1 minute.

CRACKED PEPPERCORN STEAK

4 Tenderloin Steaks

1/3 Cup bottled oil & vinegar salad dressing

1/3 Cup dry red wine

1/4 Cup chopped fresh chives

1 tsp. minced garlic

1 tsp. fresh cracked peppercorns


Place meat in a sealable plastic bag. Combine salad dressing, red wine, chives garlic & pepper.  Pour over steaks and close bag.  Marinate steaks in refrigerator for 8 to 12 hours.

Drain steaks and reserve marinade.  Grill meat on Medium flame to desired doneness, turning once and brushing with marinade halfway through cooking.

Allow 15 minutes for medium rare  and 20 minutes for medium doneness.  Discard remaining marinade.


CIDER VINEGAR BASTING SAUCE

1 bottle of apple cider vinegar

6 oz. water

1 stick of melted  butter

1 tsp. garlic

1/2 tsp. paprika

1/2 tsp. cayenne pepper

salt and pepper


This is an excellent basting sauce for grilling chicken, cooked slowly.  Also, a good way to spice up a pork chop.
